Ingredients: makes about 8 small Rostis
1 Sweet Potato, peeled and grated
1 Zuchini grated
1/2 tsp salt
1/2 tsp Baking Powder
1 tbsp Sesame Seeds
Coconut Oil for cooking
Mix the Zuchini and Sweet Potato in a bowl, add salt and let it sit for 15 min. Squeeze out the water. Add baking powder and sesame seeds.
In a non stick pan heat some coconut oil. take tablespoons of the mix and pat it in the pan make a flat round shape. Cook on one side then flip over and cook the other side. Add more oil as it will soak it up and will make crisp Rostis.
- Serve with fresh home made Jam or garlic sauce
- Topped with boiled, fried or poached egg with a salad or stir fry on the side this is a satisfying lunch or snack
- Drizzle with Mustard Sauce and serve on a bed of green salad
Variation: one can also use potato, green papaya, carrot or beetroot. Make sure there is potato or sweet potato in the mixture for the starch.
