Method:

In a food processor, process cashews and coconut until crumbly. Add salt, cardamom, chopped dates and process. Add vanilla, tahini, coconut oil and process until it is all well mixed. Adjust the quantity of coconut oil and tahini, if its dry add a bit more. Make bite sized balls, roll in dessicated coconut and enjoy!

Ingredients:

1 cup cashews

1 cup mejdool dates

1/2 cup shredded coconut

1/2 cup Tahini

2 tsp vanilla essence

1/2 tsp cardamom powder

2 – 3  tbsp coconut oil or coconut butter room temperature

pinch of sea salt

Ayurvedic Perspective:

It’s a nourishing snack, pacifying for Vata and Pitta constitution. Cardamom and Tahini gives it a warming effect which is great for Vata (air and ether elements). Coconut oil and coconut are slightly cooling and that is good to pacify Pitta (fire and water elements). Cashews are nourishing for Pitta and Vata.
