Rainbow Spring Rolls

Serves 4


Raw beet “hummus”:
1 cup raw beetroot
1/4 cup raw walnut or almond butter
1/3 cup shelled hempseeds or sesame seeds
2 cloves of garlic

lemon juice and zest
1 tsp cumin powder
pinch sea salt


1 cup carrot, cut julienne
1 cup cucumber, cut julienne

1 cup spinach leaves
4 sheets of Rice paper

For the hummus, combine all ingredients in the food processor and process until smooth. Set aside.
To assemble the spring roll, dip the rice paper in lukewarm water, lay out on a a wooden board, spread about 1 Tbsp Hummus in the middle. Lay some of the julienned carrot, then the cucumber and spinach over that. Take the sides and stick them on each other forming a roll. Repeat with the other rice paper sheets. Enjoy!
