Ayurvedic Persepctive:

This raw salad has nourishing and cooling properties. Therefore it is very beneficial for Pitta constitution (Pitta dosha is comprised of fire and water elements) and ideal in summer for people with Pitta constitution. People with Vata constitution (air and ether elements) and Kapha constitution ( water and earth elements) can also enjoy it in summer, but in moderation. To make it more balancing for Vata and Kapha constitution, it would be good to add some pungent/hot spices like fresh ginger, turmeric, a pinch of cayenne. This will make it more digestible for them and not too cooling.

Ingredients:

  • 2 carrots
  • 1/2 cucumber
  • a small piece of purple cabbage
  • 2 handfuls of greens of your choice – spinach, kale, lettuce, mustards
  • 1 bunch of herbs – parsley and coriander

Dressing made with – juice of half lemon, 2 tbsp olive oil, 1 tbsp apple cider vinegar, 1 tbsp tamari or soy sauce and some herb salt.

Process all vegetables in a food processor until fine. Scoop out in a glass bowl. Dress with the above dressing. It tastes better after two hours of making as the dressing gets soaked in. Add small pieces of radish and cucumber. Enjoy as salad on its own. Use as filling for Sushi rolls, Mix with rice or quinoa to make salad.
