Ingredients:  makes about 8 small Rostis

1 Sweet Potato, peeled and grated

1 Zuchini grated

1/2 tsp salt

1/2 tsp Baking Powder

1 tbsp Sesame Seeds

Coconut Oil for cooking

Method:

Mix the Zuchini and Sweet Potato  in a bowl, add salt and let it sit for 15 min. Squeeze out the water. Add baking powder and sesame seeds.

In a non stick pan heat some coconut oil. take tablespoons of the mix and pat it in the pan make a flat round shape. Cook on one side then flip over and cook the other side. Add more oil as it will soak it up and will make crisp Rostis.

Serving Sugestions:

  • Serve with fresh home made Jam or garlic sauce
  • Topped with boiled, fried or poached egg with a salad or stir fry on the side this is a satisfying lunch or snack
  • Drizzle with Mustard Sauce and serve on a bed of green salad

Variation:  one can also use  potato, green papaya, carrot or beetroot. Make sure there is potato or sweet potato in the mixture for the starch.
