Ingredients: Serves 2

  • 4 hard boiled eggs
  • 1 tsp mustard paste
  • 1 tsp mayonnaise
  • salt and pepper to taste
  • 1/4 tsp turmeric
  • 1/2 tsp garlic powder
  • 2 tsp olive oil
  • little water
  • smoked paprika and chives for presentation

Method:

Cut the eggs in half lengthwise. Scoop out the yolks in a bowl and mash. Add, mustard paste, mayonnaise, salt, turmeric, garlic powder, oil and water. Mix well into a paste. Scoop it back into the egg white. Sprinkle with some smoked paprika and chives.

  • with toast for breakfast or all day snack
  • on a bed of fresh salad
  • as a side to quinoa or couscous salad
