Ingredients: Serves 2
- 4 hard boiled eggs
- 1 tsp mustard paste
- 1 tsp mayonnaise
- salt and pepper to taste
- 1/4 tsp turmeric
- 1/2 tsp garlic powder
- 2 tsp olive oil
- little water
- smoked paprika and chives for presentation
Method:
Cut the eggs in half lengthwise. Scoop out the yolks in a bowl and mash. Add, mustard paste, mayonnaise, salt, turmeric, garlic powder, oil and water. Mix well into a paste. Scoop it back into the egg white. Sprinkle with some smoked paprika and chives.
Serving Suggestions:
- with toast for breakfast or all day snack
- on a bed of fresh salad
- as a side to quinoa or couscous salad
