Cashew Orange Persimmon Cream Bowl is a light, refreshing and satisfying dish that can be eaten for breakfast, afternoon snack or dessert. It is raw vegan.

Ingredients: makes 4 serves

  • 1 cup cashews soaked overnight
  • juice of 1 mandarin or orange
  • 1 tsp orange essence
  • 2 tbsp coconut sugar and 6 drops stevia

For Serving:

  • 1 persimmon – pureed
  • fresh fruits of choice
  • roasted almonds or other nuts, dessicated coconut


Blend cashews. orange juice, essence, sugar ans stevia in a high speed blender until creamy. Pour in a container and refrigerate for 2 or more hours.

Serving Suggestions: Place a few tablespoons of Cashew Cream in a bowl, arrange couple of tablespoons of Persimmon Puree on one side in the bowl. Decorate with sliced fresh fruits of choice – persimmon, orange, mandarin, kiwi, apple, banana, roasted almonds, sprinkle with dessicated coconut and voila! It’s ready to be devoured.
