- 1 cup buckwheat flour (makes about 6 thin pancakes)
- pinch of salt
- few drops of stevia or 1 tsp coconut sugar (not needed but pancakes taste nicer)
- a little water kefir for fermenting but not required, you can use filtered water instead
- water to mix
Mix all the dry ingredients, soak in some kefir and water mix and leave covered in a warm place for up to 6-8 hours. After fermenting for 6-8 hours, stir and check the consistency. Add more water if needed to make it thinner. You can add almond/rice or oat milk if you prefer.
Make pancakes as usual. Enjoy them as a savoury dish with olive paste, mustard, veggies, curry etc or as a dessert with whipped cream, ice cream, fruit custard, honey and lemon juice and toasted seeds
