Ingredients: makes 12

  • 2 cups flour (spelt white and wholemeal) for gluten free version  – almond flour/buckwheat flour/rice flour
  • 2 ripe bananas mashed
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp apple cider vinegar  (makes fluffy muffins)
  • pinch salt
  • 1/2 cup coconut sugar or 6 soaked and pureed dates 
  • approx 70 gm chocolate chips or chocolate bar broken in pieces
  • approx 1/2 cup frozen blueberries
  • 1 tsp orange essence OR 1 tbsp fresh orange zest and juice of 1 orange
  • 100 gm melted coconut oil or olive oil
Method:

Mix all the dry ingredients in a bowl. Add oil, vinegar, orange essence OR juice and zest and mashed banana and blueberries, gently fold in. Add some water if necessary to get a thick consistency. Spoon them out in muffin tin, add more chocolate chips if needed, and bake in a 180C pre heated oven for 15 min. Serve warm with your favourite ice cream or whipped up coconut cream.
