Ingredeints: Serves 2
4 medium potatoes
1/2 tsp himalayan salt
1/2 tsp turmeric powder
1 tsp curry powder
some cut parsley or coriander
2 cloves of garlic crushed
some coconut oil for shallow frying
Method:
Boil the potaotes. Peel and mash with a potato masher. Add salt, turmeric, curry powder, crushed garlic, cut parsley or coriander. Mix it all. Make small balls. Heat some coconut oil in a non-stick pan. Flatten the balls in between your palms and place in the pan. Bake on medium heat until golden brown, then flip over. Bake the other side till golden brown. Serve warm with pesto, yogurt or mustard sauce. Enjoy it as a breakfast or entree.
Ayurvedic Perspective:
This is a Vata balancing dish as potatoes are grounding for the Vata Constitution (air and ether elements). Therefore its a nourishing food for Vata and Pitta Constitution people. Kapha Constitution peole need to eat it only in small amounts.
