Quinoa Apple Cardamom Porridge | Ayurveda Mandala

Method:

In a saucepan, put quinoa, water, milk, salt, spices. Bring to a boil and simmer on low heat for 10 min. Now add apple and dry fruits. Simmer further for 10 min until cooked.  It takes about 20 min in total to cook quinoa. If you pre-soak the quinoa for 4 hours it takes less liquids and less time to cook. Serve in a bowl, decorate with nuts and seeds of your choice. Enjoy warm!

Ingredients: makes 4 portions

1 small cup quinoa

2 cups non dairy milk of choice – almond, hazelnut, oat or rice milk

2 cups pure filtered water

1 apple, peeled and cut in fine slices

1/2 tsp salt

4 cardamom seeds crushed

2 tsp cinnamon powder

dry fruits of choice – small amount of raisins/apricots, dates

nuts and seeds of choice for decorating – almonds, cashews, sesame seeds, pumpkin seeds
